is the result of a local partnership with our
friends and neighbors at Maitland Mountain Farm. Quite serendipitously, while we were experimenting with vodka, they were growing wormwood and spearmint, which we combined with sweet fennel, anise seed, lemon balm, hyssop and a few other secret herbs. A delicate balance of infusion and maceration provides the traditional green color and a full-bodied, herbal flavor which is light on anise yet mysteriously well balanced with traditional absinthe spices.
No artificial colors or additives were used inmaking Absinthe des Voisins. As a result, its color will naturally darken over time.
